This pieces are obtained from the Ibérico pig forelimbs, fatten up its last months in montanera (natural pasture of holm oak and cork oak) until getting 170 kg. It is the result of a curation process with painstaking care in a natural way from 24 to 28 months, giving a slim piece with golden tones external fat that denote its natural feeding with acorns.
